  1. Because the Laird of Fintry Rum barrel finish reminded me of a beach, I wanted to create a vacation drink. Something you'd drink while you're relaxing far away from work. I ended up deciding on a Pina Colada riff. I think a single malt goes really well with coconut and the rum barrel finish really helps bridge the gap when I'm replacing rum with whiskey so I was very happy with the result. I decided to go with a vanilla/cinnamon infused cream of coconut and that brought everything together really nicely. The sherry goes really nice with both the whiskey and the coconut. To top it off, I added a bit of Condesa aromatic bitters from Bittered Sling as a float because I thought a little spice would go nicely with a tiki drink like this
  2. Put all ingredients except the bitters in a shaker and shake with ice until cold, about 30s to a minute. Strain into a hurricane glass over crushed ice and top with the bitters. Garnish with pineapple fronds, a little lime island complete with umbrella, and some mint that you forgot about even though you paid an arm and a leg for it because your grocery store ran out and you had to use organic. Enjoy!
