Perfect Pair

 1 oz Pisco
 ½ oz Apricot brandy liqueur
 ½ oz Apricot syrup
 ¾ oz Freshly Squeezed Lemon Juice
  oz Habanero tincture
 1 egg white (or 1oz from a carton)

This might be my magnum opus.
A few weeks ago I had @refinedfool Apricot Habanero IPA & I thought it was just the perfect pair (haha get it? also there's pear in here too? 😅). I knew I needed to steal this flavour combo so I got to work making an apricot syrup & I already have an infinite supply of habanero tincture due to a happy little accident (pour one out) that I had 🙃

I wanted this to be refreshing and light but I didn't want to go the bubbles route so I was fixated on making a sour. I tried some whiskey, I tried mezcal and it just wasn't working out the way I wanted. They were good but they weren't "it". The apricot syrup didn't have as much of an impact as the habanero tincture (oops 😬) so at some point I started using a bit of apricot brandy to up that game.

Well I woke up one morning and was like "why don't I just use brandy?" And that's when it dawned on me I had the single best bartlett pear brandy in the known world sitting in my liquor cabinet. Pear and apricot is a dope combo so I guess you can say apricot kinda bridged the gap between pear and habanero. Seriously though this stuff is like drinking liquid pear but also you get drunk. I have been looking for an excuse to use it and I've been kinda worried I would polish the bottle off by taking sneaky sips before I ever got around to it. Well I finally did it. I used a split base with some Pisco and it worked so well. If I died now I'd be legit pissed off that I died this young but at least this would be my legacy.

Put all ingredients into a shaker without ice and dry shake for about 30s to a min. Add ice & shake until cold, another 30s to a min. Double strain into a chilled rocks glass and add 8 or so drops of @bittered_sling Condesa bitters. Attempt to make a beautiful spiral but fail & then just swirl them around randomly as if it was intentional 🙄. Enjoy!
