Proof: Hennessy XO Finished Bourbon-Style Whisky 2025-002
Born in the local North-Okanagan fields, our northern-varietal grain corn and deep-malted barley are milled, mashed, fermented and then distilled on site in our state-of-the-art copper-pot stills, before being barrel-aged in our custom toasted and charred virgin white oak casks for 5 years.
This perfectly matured “Bourbon of the North” was then racked and transferred into a Hennessy XO Cognac cask for an additional 6 months of marriage. On the palate, a seductive nose of rich candied figs, sun-dried stone fruit and deep roasted caramel. Indulge in layer upon layer of vanilla, sun-soaked raisins, and toasted northern oak building towards a truly symphonic and impossibly long finish.
