Shake all ingredients except sparkling wine in an ice-filled cocktail shaker.
Strain into a chilled glass, top with sparkling wine.
*To make honey syrup: bring honey and water to a boil, then remove from heat immediately and chill. Keep refrigerated. A 1:1 ratio of honey to water will make a more mild-tasting honey syrup, you can increase the ratio of honey to water, making a 2:1 syrup or even a 3:1 for a sweeter, richer syrup.
