Thyme after Thyme
1 cup Mixed berries
½ cup Sugar
8 Sprigs Thyme
Muddle and leave for two days.
Add ½ cup Apple Cider Vinegar, muddle and leave for one more day.
Strain and refrigerate.
½ cup Honey
½ cup Water
½ cup Sliced fennel
Bring to boil in small saucepan and take off heat immediately, allow to cool and refrigerate for one day. Strain to remove fennel and keep refrigerated.
Place all ingredients into an ice-filled shaker.
Shake and double strain into a coupe.
Garnish with a lemon and thyme sprig.
